Silo is not strictly a vegetarian or vegan restaurant as it occasionally has fish or meat dishes on its seasonal menu. However, that’s where the similarity ends. With an industrial décor, furniture made from upcycled material and jam jar glasses, the ethos behind the Silo is to achieve zero waste. Focussing on flavours and textures, expect to see dishes like charred shishito peppers and glazed celeriac with fermented potato on the menu.
